My Rice Krispie Popsicle Failure

I’m the first to admit when one of my cooking/baking/crafting masterpieces has somehow failed me. This time, I really thought I’d make it work, but that dang 90 degree weather we’ve been having really put a damper on my plans.

So one of my oldest and dearest friends, who I refer to as a cousin, is getting married in April. I am sooooooooo excited to stand by her side as one of her bridesmaids. Let’s pause for a moment to see how adorable her gift to me to ask me to be a bridesmaid was. I cried. A lot. I’m emotional, get over it. This wine sippy cup, perfect for a wino like me was even monogrammed with my initials. I take it everywhere!

I was even more excited when another bridesmaid suggested a belated surprise engagement party in DC and asked if I’d handle dessert. Uh, Duh! My favorite part of every meal. So, I planned with her sister, the MOH (Maid of Honor for you non-abbrev lang people), and decided on some rice krispie treats, chocolate covered pretzels, and cookies. I had a gazilion other ideas, but figured I’d better reign it in an stick to a few crowd pleasers.

So the cookies and chocolate covered pretzel turned out great! I did dark and white chocolate covered pretzels, oatmeal chocolate chip cookies, and sugar cookies with vanilla icing. (Don’t judge, the icing for the cookies came from a can). Disclaimer: White chocolate is not fun to melt. Somone could have warned me. Or I guess I should have read up on it. If ANYONE has a suggestion for how to make white chocolate melt easier, or stay melted longer, please let me know. I struggled hard with this, and ended up smearing it on everything. In the end it was fine, just annoying.

Moving on to the rice krispie treats. Man did I think I had this project nailed. Boy was I wrong. Like I said, I don’t think the heat helped my cause, or the 3 hour drive to DC, or their 3 hour ride to DC in a cooler to sit in front of windows where the sun was beating on them. We all gave up at some point and someone ripped them all off their sticks (thank you by the way) and they we still delicious. The whole staying up on a popsicle still thing didn’t pan out so well.  You can see that in the two up close pictures of the rice krispie display. However, that one pic I was able to snap looked adorbs. And the treats themselves… delish! And with the white chocolate… DOUBLE delish. So the through was there at least. Again, recommendations for how to improve this process is greatly appreciated. I’m thinking freeze them for longer so they harden more. Also, a three hour drive in a cooler in the trunk of our car on a 90 degree day, probably not something I’ll attempt again. Regardless, photos of the fun are below.
